This golden honey has a beautiful viscosity and aromas of butter and toasted coconut. It tastes of barley sugar, ending on a spicy note. With this delicious blend of warm and woody aromas, this honey will pair beautifully with fresh cheeses and blue cheeses.
Not only are cheeses and honeycombs visually stunning side by side, but the delicate sweetness of the honeycomb tones down the intensity or acidity of the cheeses. The contrast in texture between the crisp honeycomb and the silky-smooth cheese creates the perfect bite.

Forest honey harvested in mid-summer. The apiary is in a magnificent clearing in the Eastern Townships, mostly surrounded by forest. The wooded edge near the clearing is very favorable to the development of buckthorn. Its pretty white flowers are very nectariferous and offer abundant flowering for several weeks.

To make honey liquid again, simply chamber the vial in a glass of very hot but not boiling water for a few minutes, and lightly shake the vial a few times.
Our honeys are not pasteurized and are minimally filtered to retain their natural character and proprieties.
